Plant Paradox Approved: “Mac” and Cheese

This idea came from my brother but I made my own version!

I love mac and cheese and I was so bummed to give it up… even the gluten free noodles. 😦

But, don’t worry guys, we have millet!

Just cook the millet like the package says (I get Bob’s Red). You boil 2 cups of water, add 1 cup of millet and bring the water down to a simmer. You cover it for about 20 minutes or until the water is absorbed. This probably makes enough for 5 people. It’s the perfect side for any dish!

Here’s how you make my delicious millet and cheese:

Recipe:

Cheese Sauce:

  • 1 tbsp tapioca flour
  • 1 cup A2 whole milk
  • 1/2 cup parmesan cheese
  • 1/2 cup shredded goat milk cheddar
  • Salt and pepper to taste
  • 1 cup millet
  • Directions:

  • In a sauce pan, whisk the A2 milk with the tapioca flour on low heat for about 3 minutes or until thick.
  • Add the cheese and mix until melted.
  • Add salt and pepper to taste.
  • Pour over your cooked millet and fold in.
  • Enjoy!
