My recipe was inspired by The Castaway Kitchen’s Avocado Brownie recipe but I changed it up so it’s perfectly Plant Paradox!
These brownies are the perfect texture and flavor and super easy to make!
1 organic avocado
2 pasture raised eggs
1/4 cup melted coconut oil or French butter
3 tbsp unsweetened and blanched almond butter (I use Barney’s Butter Bare Smooth)
1/2 tsp aluminum free baking soda
1/3 cup cocao powder
1/4 tsp salt
1/3 cup of Swerve granular
1 tsp vanilla extract
1/2 cup Lily’s Chocolate Chips
Preheat oven to 350*
Spray small baking dish with avocado oil spray or line with parchment paper
In a mixing bowl, mash down the avocado until smooth. Add all wet ingredients and mix.
In a separate bowl, mix the dry ingredients.
Combine with the dry and wet ingredients. Mix until well combined (no more than 30 seconds)
Scoop the batter into the baking dish.
Bake for 25 minutes.
Let cool and enjoy!
